Ingredients
- 1.5 lbs chicken thigh
- 1 cup black beans
- 1 cup salsa
- 1 cup chopped lettuce
- 1.5 cups uncooked white rice
- 7 ounces chipotle in abodo
- 1 lime
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
Instructions
- Prepare the chicken: Marinate the chicken in a ziplock bag with the chipotle in abodo, salt, and pepper. Place in the refrigerator for 2hrs or overnight.
- Cook the rice: Cook the rice in a rice cooker or in a pan according to the instructions on the package.
- Cook the chicken: Cut the chicken into bite size peices. Add the chicken and chipotle mixture to a skillet on medium high and cook for 10-12 minutes (or until done), flipping the chicken to cook all sides.
- Arrange the bowls: Add rice to each burrito bowl and top with chicken. Arrange black beans, salsa, and lettuce in the bowls as you see fit. Add lime wedges for a fresh squeeze when served.
